We are recruiting motivated students to join our research project on innovative freezing technologies and flavor quality enhancement of aquatic food products. This project focuses on developing advanced freezing techniques to improve the flavor, quality, and value of seafood products.
Research Areas:
Innovative freezing and cold-chain technologies
Aquatic food flavor and quality analysis
Protein and lipid changes during freezing
Instrumental analysis (GC-MS, LC-MS, texture, etc.)
High-value aquatic food processing
